Serve your guests some comfort food with this light and easy recipe bursting with flavour! To create this dish quickly, you will first need to gather all the ingredients:

  • 1 3/4 cup of all-purpose flour.
  • 1/3 cup of sugar.
  • 2 1/2 teaspoons of baking powder.
  • 1/2 teaspoon of salt.
  • 1 cup of fresh or unthawed frozen blueberries.
  • 3/4 cup of milk.
  • 1 large egg.
  • 1/3 cup of melted butter.

First, combine flour, sugar, baking powder and salt in a small bowl, adding blueberries after mixing together. Next, add in the milk, melted butter, and egg, and mix until the dry ingredients are moistened, making sure not to overbeat. Then, spoon the mixture into an aluminum-lined or paper-lined microwave-safe baking or cupcake pan, making sure not to fill more than 2/3 cup. Using your commercial microwave, microwave on MEDIUM-HIGH for 3 minutes, then let rest for an additional 3 minutes. Next, microwave on HIGH for another 2 to 3 minutes until muffins are done, let them rest in the pan for 2 minutes. Finally, serve them warm to guests with butter or honey.

  • 3 tablespoons of flour
  • 2 tablespoons of chopped almonds.

First, combine the blueberries, sugar, and cornstarch in a greased 9” microwave-safe pie plate. Next, cover and place in your commercial microwave on HIGH for 7-8 minutes, stirring twice. During this time, combine the oats, brown sugar, flour, almonds and cinnamon in a small bowl while cutting in the butter to the mixture until it resembles coarse crumbs. Next, sprinkle the oat mixture over the blueberry mixture and microwave, uncovered, on HIGH for 2-3 minutes. Finally, serve warm to guests with vanilla ice cream.
