It’s the greatest – and busiest – time of year for professional Canadian kitchens! Peanut Butter Chestnuts

These chestnuts might not be roasting by an open fire, but they’ll sure taste delicious to your guests! To create this dish quickly, you will first need to gather all the ingredients:  5-1/2 cups of confectioners’ sugar, 1 2/3 cups of peanut butter, 1 cup of melted butter, 4 cups (24 ounces) of semisweet chocolate chips, and 1 teaspoon of shortening.

First, using a large bowl beat the sugar, peanut butter, and butter until smooth. Then, shape into 1 inch balls and set them aside for now. Next, using your commercial microwave oven, microwave the chocolate chips and shortening on until melted, then carefully stir until smooth. Dip balls in the chocolate mixture, allowing excess to drip off, and place on a wire rack over waxed paper. Finally, refrigerate for 15 minutes or until firm. To store, cover them up and place back into the refrigerator.

“Instant” Bread Pudding

A warm and sweet dessert perfect to serve your customers for the holidays!  To create this dish quickly, you will first need to gather all the ingredients: 1 cup cubed, fresh bread, 1 large egg, 1/3 cup of milk, 1/4 teaspoon vanilla extract (optional), 2-3 tablespoons of sugar, and 1-2 tablespoons of chocolate chips, butterscotch chips, dried fruit, cinnamon, or the garnish of your choice.

First, put the bread in a microwave-safe bowl and set aside. Then, whisk together the egg, milk, vanilla, and sugar. Next, pour the mixture over the bread in the bowl, stirring gently to combine. Stir in chips or dried fruit next, and then sprinkle with cinnamon, cinnamon-sugar, or nutmeg. Next, microwave the mixture for 1 minute*, uncovered, in your commercial microwave. If the mixture is still liquid, continue microwaving in 30-second intervals, until the pudding is cooked all the way to the centre. Finally, drizzle with melted caramel, fudge sauce or any choice of topping.

*Note: All cook times listed are for a 1000-watt microwave oven. Higher wattage ovens will require less cook time.
