To create this dish quickly, you will first need to gather all the ingredients: 1/2 cup of rinsed and drained quinoa, 1 cup of cold water, 1/2 teaspoon of cinnamon (add on a little more for garnish later on), 2 teaspoons of butter, milk or cream to taste, maple syrup to taste and a handful of banana slices. First, add your rinsed and drained quinoa into a microwave-safe dish, stirring in 1 cup of cold water, cinnamon, and butter. Place the dish into your commercial microwave oven and microwave for 4 minutes. * Then stir and microwave again for 3 more minutes. Carefully remove the dish, cover it with foil and let it sit for 2 minutes. After, fluff the quinoa using a fork and stir in the remaining butter. Finally, top with milk, maple syrup, banana slices and cinnamon to taste.

*Note: all cook times are based on a 1000-watt microwave. Higher wattage microwaves will require less cook time.

Shakshuka and Quinoa

First, add your rinsed and drained quinoa into a microwave-safe dish, stirring in 1/2 cup of water, and covering with a damp paper towel. Place the dish into your commercial microwave oven and microwave for 5 minutes. Carefully remove the dish, stir in the tomato sauce, and microwave for an additional 3 minutes. After, fluff the quinoa using a fork and crack an egg over the top. Cover the dish again with a damp paper towel and microwave for an additional minute.
