What is a high-speed oven? How does it work?

It can come in many different forms, but as the name suggests, it’s an oven that—through a combination of convection, impingement, microwave, and radiant heat—cooks food at a fraction of the amount of time to a normal oven. It can cook your kitchen’s meals anywhere from five to twenty times faster than your standard commercial microwave or convection oven could. Each type of cooking involved helps build these amazing speeds.

Microwave does a large portion of the cooking because it’s by far the fastest way of cooking your food. But unlike with a standard 1800-watt microwave, there are other functions helping!

Convection helps with cooking your food evenly when the microwave function won’t be enough for your dish. A fan in the oven distributes temperatures evenly to ensure an expert finish every time.

Impingement is a newer method of cooking in high-speed ovens that involves blasting super-heated air directly onto food to crisp it perfectly in a small amount of time. It’s often used for pizzas, lasagnas, and some kinds of meat.

Radiant heat, also known as infra-red, helps crisp up a dish when impingement would risk damaging the dish. If you’re cooking a delicate dessert or maybe a piece of fish that needs special attention, radiant cooking is your friend.
