To create this dish quickly, you will first need to gather all the ingredients: 12 ounces of cranberries (fresh or frozen), 1 1⁄4 cups of sugar, 1⁄2 cup orange juice or 1⁄2 cup water, and 1 teaspoon grated orange rind.
First, combine all ingredients in a 3 quart microwavable safe bowl and mix well. Next, cover with wax paper and microwave on for 5 minutes*. Then, stir well, recover with wax paper, and microwave another 5-7 minutes longer until cranberries pop, and sauce has thickened. When the dish is done, keep the dish covered and allow it to cool. Finally, transfer the dish to a proper serving bowl and chill for 3-4 hours.
*Note: All microwave times listed are for a 1000-watt microwave. Higher wattage microwaves will require less cook time.
White Chocolate & Cranberry Mug Cake
This is a warm and delicate dessert that’s perfect to serve your customers during the holidays! To create this dish quickly, you will first need to gather all the ingredients: 3 tablespoons of flour, 1/4 teaspoon of baking powder, 2 tablespoons of sugar, 2 tablespoons of milk, 1/2 tablespoon of vegetable oil, 1/2 tablespoon of lemon juice, 7-10 chopped cranberries, and 1 1/2 tablespoons of white chocolate chips.
First, combine all the dry ingredients (except for the white chocolate chips) together in a microwaveable safe mug and mix well. Next, add all the wet ingredients and mix until mixture is completely wet. Then, add the cranberries, mixing until they are submerged, and place the entire mixture in the microwave for 50-65 seconds. While the mixture is heating, pour the white chocolate chips into a microwaveable safe bowl to be heated in the microwave for 30 seconds, after the mug cake is done. Once the white chocolate chips have finished heating, mix to finish the melting and then drizzle over the mug cake.
