Warm Up Your Guests With These Comforting Winter Dishes

Quick and Easy Polenta

Polenta is a wonderful and filling base for just about any savory meal, and it works especially well as comfort food during cold winter months. To create this dish quickly, you will first need to gather all the ingredients:  1/4 cup polenta, a pinch of salt, 1 cup of water, and 1/3 cup of shredded string cheese.

First, pour your cup of water into a microwave-safe bowl, adding in the polenta and a pinch of salt, and cook in your commercial microwave for 2 1/2 minutes*. From there, remove the bowl and stir. Return the bowl to the microwave and cook up to an additional 2 1/2 minutes, checking on it at the halfway mark. When ready, pour the polenta into a serving bowl, and then sprinkle the shredded cheese on top to finish. You can also add cooked greens on top, as an additional and optional topping, before serving. *Note: All cooking times are based on a 1000-watt commercial microwave. Higher wattage microwaves will require less cook time.

Loaded Baked Potato Soup

This delicious, creamy soup is a winter staple and favorite amongst those looking to keep warm this winter season! To create this dish quickly, you will first need to gather all the ingredients: 3/4 cup of water, 3 tablespoons of small cubed potatoes, 1 tablespoon of chopped white onion, 2 tablespoons of cheddar cheese, 1 tablespoon of cooked bacon, 2 teaspoon of cornflour, 1/2 cup of chicken/vegetable stock, 1/4 cup of milk, a pinch of salt and pepper, and sour cream for garnish (optional).

First, add your potatoes and water into a small microwaveable bowl and microwave for 3 to 4 minutes, or until the potatoes are tender. Stir at the halfway mark. Once cooked, drain the cooking water. Next, add bacon, cheese, onions, and cornflour into the dish, while stirring the potatoes. Then, add in the stock, milk, and a pinch of salt and pepper, while stirring. Place the bowl back into your commercial microwave and cook for up to 3 minutes, or until the mixture thickens.
