Winter soups are a perfect addition to add to your menu this season to help your guests stay warm. Here are a few suggested winter soup recipes that you should consider adding to your menu:
Potato & Leek Soup
This soup is irresistibly delicious and is the perfect hot soup for a winter day! To create this dish quickly, you will first need to gather all the ingredients: 350g of sliced leeks, 350g of peeled and cubed potatoes, 25g of butter, 300ml of chicken stock, 300ml of whole milk, 30ml of crème fraiche, salt and pepper.
First, place the leeks, potatoes and butter altogether in a large microwave-safe bowl. Next, cover the dish and cook it for 5 minutes* in your microwave. Gradually add the stock and seasoning during the cooking time. When finished, re-cover and cook again in the microwave for 15 minutes, or until the vegetables are tender, stirring at the halfway point.
When finished microwaving, allow the mixture to cool before placing in a liquidiser and blending until smooth. Add and stir in the crème fraiche and season to taste. Finally, heat the entire dish again in your microwave, this time for 3 minutes (or until piping hot).
*Note: All cook times are based off a 1000-watt commercial microwaves. Higher wattage microwaves will require less cook time.
Tomato & Basil Soup
This soup is so easy to prepare and will delight your guests this season! Gather all the ingredients you need first to create this dish quickly: 1tbsp of oil, 1 chopped onion, 1 stick of chopped celery, 1 full, finely chopped carrot, 1tsp of sweet or smoked paprika, 2tbsp of tomato purée, 1.25kg of quartered tomatoes, 1tbsp of sugar, 1L of vegetable stock, 1 tbsp of green pesto, and a handful of basil leaves.
First, place the oil, onion, celery, carrot and paprika altogether in a large microwave-safe bowl. Next, cover the dish and cook it for 5 minutes in your microwave. Next, add the tomato purée, tomatoes, sugar and hot stock to the bowl, re-cover and cook again in the microwave for 15 minutes, or until the carrots are soft.
When finished microwaving, allow the mixture to cool before placing in a liquidizer and purée until smooth. Then, re-cover and cook on MEDIUM for 3 minutes (or until piping hot) in your microwave. Serve topped with a swirl of pesto, and garnish with basil leaves.
